Whole Food Wednesdays are about remembering to incorporate more whole foods in to your meals.
Nothing says fall like some butternut squash. It is currently in season until about February. Great source of vitamins A and C and a good source of beta-carotene, magnesium, manganese, calcium and potassium.
How do you pick one out? If you can push a fingernail into the rind it is an immature squash and will lack in flavor and sweetness. Make sure the rind is firm and the squash is heavy.
Tip: Cutting it in half and baking it is an excellent way of preserving and intensifying its flavors. When it is done, top with some grass-fed butter and pink himalayan salt OR add a tiny bit of maple syrup and some cinnamon (or pumpkin spice like my husband does!) #realfood #cleaneating #wholefood #wholefoodwednesdays #butternutsquash
