It’s officially November and I just love baking this time of year!
Last week I got up early and made some banana cinnamon bread. It was a big hit in our house and I have had some requests to post the recipe. This was my first time playing around and making this recipe! Surprisingly, it turned out really good. Usually takes me a few times to get a recipe figured out, but this one worked in ONE try! Hallelujah! LOL
Ingredients (large bowl):
- 3 ripe large bananas
- 1/3 cup grass-fed butter (melted)
- 1 egg
- 1/2 cup maple syrup
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1 1/2 cups flour (I used brown rice flour)
- 1 tablespoon cinnamon
- 1/4 cup coconut sugar
Puree the bananas in a large bowl. Then add in the melted butter, egg, maple syrup, vanilla, baking soda, salt, and then flour. Mix with a wooden spoon until the batter is throughly combined.
In the smaller bowl combine the cinnamon and coconut sugar and set aside.
Grease a baking bread loaf pan (9×5) with butter and fill the loaf pan about 1/4 with batter and then sprinkle a portion of the cinnamon sugar mixture on top and then layer it with more batter and then sprinkle more cinnamon sugar in between the layers of batter until you have no more left. Any left over cinnamon sugar you can sprinkle on top of the loaf.
Bake at 350 for 50-60 minutes!!
